FATHER'S DAY GIFT IDEAS
Father’s Day is June 19th, and it will be a particularly special one for our family this year; one of our sons has recently become a new dad. This new arrival has brought so much joy.
At a recent baby shower and at family dinners, I’ve enjoyed reminiscing and sharing stories of what it was like in the early years of raising our own family.
I now wonder: What will his son be like? Will he love sports like his dad? Will he love food as much as his dad?
So this Father’s Day we will honour our new Dad, his Dad, and all the fathers before. And there will, as always, be lots of stories.
We will celebrate with a special meal, of course. In addition to making some of my husband’s favourites, this year I’ll be adding two of my son's favourites to the menu as well. He’s fond of jambalaya and pizza, so I'll make them for him and share the recipes with you here in this newsletter.

I'll be making both dishes in Lodge cast iron pans. Both recipes work particularly well in cast iron. In fact a cast iron skillet is one of my “must have” recommendations for the kitchen, back yard, cottage, and campsite.
Lodge is our perennial brand of choice. Crafted in Tennessee since 1896, Lodge cast iron is highly versatile; it can be used on any kind of cooktop, including induction. It can also be used on the outdoor grill or even over an open fire. Cast iron gets better and better the more it is used, and is magnificent at retaining heat. Not many pieces of cooking equipment can boast all those attributes.

For one more great Father's Day gift suggestion, we adore the new cookbook called The Wok from J. Kenji López-Alt (author of The Food Lab). We even secured a limited number of signed copies! We're grateful to the publisher for giving us permission to share a recipe for spicy braised tofu from this fabulous new cookbook, below. Signed or not, it's a terrific Father's Day idea.

Speaking of woks, a great wok is another kitchen must-have for anyone who enjoys Asian food. Our recommendation is the Ken Hom carbon steel wok. It's yet another kitchen workhorse. Able to withstand very high heat, it’s ideal for all kinds of favourite Asian dishes. Carbon steel, like cast iron, develops an ever-improving non-stick patina with use over time but is slicker, responds quickly to changes in heat, and (though still highly durable) is around half the weight of cast iron.
Happy Father's Day to all!
— Jill

Honing is an integral part of knife care, which is why we think it is so important to include this when buying or giving a knife. Here's a video of our Culinary Coordinator demonstrating the proper honing technique.

AUTHOR RECIPE
KOREAN-SYLE SPICY BRAISED TOFU
We're grateful to Penguin Random House Canada for allowing us to share this recipe for Dubu Jorim with you from his outstanding new book, The Wok.
Korean-Style Spicy Braised Tofu
3 tablespoons (45 ml) light soy sauce or shoyu
2 teaspoons (5 g) minced garlic (about 2 medium cloves)
2 teaspoons (10 ml) roasted sesame oil
1 scallion, thinly sliced
1 tablespoon (8 g) gochugaru (Korean chile flakes), more or less as desired
Big pinch of toasted sesame seeds
One 12-ounce (340 g) block firm tofu, cut into ½-inch slabs
2 tablespoons (30 ml) peanut, rice bran, or other neutral oil
While we typically think of braising as a long, slow process used to tenderize tough cuts of meat, there are quite a few quick-braised dishes. Braising is a hybrid cooking technique that begins with frying to create browned flavors and add texture to the surface of the food being cooked, followed by simmering it in a liquid. Dubu jorim starts with panfrying tofu and is finished by simmering it in a spicy soy sauce. It fits the criteria perfectly, which makes it a braised dish that takes only 25 minutes to cook from start to finish!
- For the Sauce: Combine all the sauce ingredients in a small bowl and stir with a fork until the sugar dissolves.
- For the Tofu: Place the tofu slices in a colander or fine-mesh strainer set in your sink, laying them out in as close to a single layer as possible. Bring a pot or kettle full of water to a boil. Pour the boiling water over the tofu slices, then let the tofu slices cool and air-dry for a few minutes. They should feel slightly tacky and dry to the touch, like a cat’s tongue.
- For the Stir-Fry: Heat a wok over high heat until lightly smoking. Reduce the heat to medium, add the oil, and swirl to coat. Add the tofu one piece at a time in a single layer (the tofu should come up the sides of the wok a little) and cook, occasionally swirling the pan gently, until crisp on the first side, about 5 minutes. (If the tofu sticks at all, let it cook undisturbed for a couple of minutes before gently prising it off the wok with a thin metal spatula and swirling the wok to ensure nothing is sticking). Slide the tofu out of the wok onto a large plate and return the wok to medium heat.
- Flip the tofu pieces (they may be stuck together on the edges and have to be gently prised apart), then return them to the wok and cook the second side, swirling the pan gently, until crisp on the second side, about 5 minutes longer. Slide the tofu back out onto a plate and set aside.
- Reduce the heat to medium-low, add the sauce to the wok, and cook, turning the tofu occasionally, until the sauce is reduced to a syrupy glaze that coats each piece, about 2 minutes. Serve immediately.
