FOR THE LOVE OF OLIVES

Among the many thoughtful gifts my children have given me over the years, one stands out. It's the magnificent olive tree they presented to me on Mother’s Day 2020 when travel ground to a halt.
My tree – Olivia – a beautiful symbol of all that I love about the Mediterranean region, is now more than nine feet tall and shares space with the lemon and fig trees on the back deck. I look at the olive tree and think of my family first. Then my thoughts drift to the Mediterranean countries I've visited and fallen in love with, and how a trip to southern Italy 27 years ago sowed the seeds for what was to become Jill’s Table in 1999. It’s a gift that keeps on giving.
Olive trees can live to be more than a thousand years old. Of course they provide their incredible fruit: the olive. Those olives can also be pressed into a highly versatile oil, used in food, cosmetics, soaps and more. Olive wood is turned into a multitude of wonderful kitchen wares and tablewares. It's a truly fruitful tree.
This is a perfect time to share some of our favourite olive products below. But it's also a time to let you know the current pricing challenges of olive oil. Extreme heat and drought has had a major impact on many of the olive-producing countries in the Mediterranean, causing shortages and skyrocketing prices. We want to let you know we are doing everything possible to absorb much of those price increases.
Nevertheless, we proudly continue to carry a wide variety of extra virgin olive oils and olives on our shelves, and below are some you might not be familiar with. By the way, the latest batch of Jill’s Table olive oil is enroute from Tuscany from the Prunetti Family Farm. It will be back on our shelves in the fall.

We’ve also just received a shipment of beautiful olive wood products from Olivewood Glory. This family-run company out of Calgary hand-crafts their kitchenwares out of olive wood from the Mediterranean. Each piece is unique in characteristic and colour.
Of course our newsletter would not be complete without a couple of recipes to share with you; prepare these for the olive lovers in your life – and don’t expect leftovers! Our first is an update of what is one of our most popular recipes ever: Greek Orzo salad. The other recipe is one chef Ran created... a fabulous dish of shrimp, chorizo and olives that is delicious served with grilled bread. We hope you like them.
As always, we look forward to welcoming you to Jill’s Table.

There are dozens of countries growing olive trees and there are hundreds of varieties of olives. Similar to wine, extra virgin olive oil can be a made from a blend of different olives, or it can be a single varietal, made with just one kind of olive. Also similar to wines, the flavour of extra virgin olive oils has a wide range and people have different preferences. Some common descriptors include:
- delicate, smooth, buttery
- fruity
- green, grassy, hints of tomato leaf, nutty
- spicy, peppery, bitter
STORAGE
- Labels on Extra virgin olive oil will often have a production date and a best before date.
- Extra virgin olive oils should be consumed within 2 to 3 years of harvest/bottling date.
- Once opened, try to use it within 6 to 8 months. Oxygen will start to diminish the flavour and quality of the oil.
- Store it in a cool dark place. Do not refrigerate. Olive oil solidifies when cold.
SELECTION AND APPLICATION
- Choose a modestly priced extra virgin olive oil for cooking.
- Save special oils for salad dressings and “finishing”: drizzled over a bowl of minestrone, a platter of tomatoes, a steak off the grill, grilled vegetables and so much more.
- Experiment with extra virgin olive oils from different countries and try different varietals.
- A bottle of olive oil makes a great gift and will last a lot longer than a bottle of wine!
