JULY 20 2022

COOL AS A CUCUMBER

With the arrival of summer, many of us are “on the move”.
You've shared your stories of trips abroad, trips to visit family you haven’t seen in more than two years… and in some cases visiting with new family members you haven’t even had a chance to meet until now. How special that is to finally connect.
While I'm excited to be heading to Italy at the end of August, and for my upcoming culinary tours next year, I realize not everyone is ready for extended and far away travel.
In early 2020, I had booked to take my Jill’s Table team to the Fancy Food Show in New York and the Chicago Housewares show. That was to celebrate our 20th anniversary that happened the previous September.
Flash forward to July 2022 and our belated celebration was a bit closer to home. We took the train to Toronto and had a culinary getaway for two days. The agenda took 12 of us to visit some of the foodie places we’ve read about, check out some restaurants and in general explore, visit and share much laughter. I’m grateful to have such a wonderful team! See Jill's Travel Notes for more.
Our getaway was confirmation that there's lots to do and see that’s not so far from home.
I've also found refuge and peace in my back yard over the past two years. I’ve become an avid bird (and chipmunk) watcher.
As the summer heats up, I have some recipes to keep you cool… and it’s a bit of a cucumber theme.
Qcumber water is one of the most refreshing sparkling beverages we’ve come across. We’re sharing a cool cocktail recipe that can utilize either gin or Sobbri, the wonderful no-alcohol gin produced nearby in Stratford.
We’ve also come up with a delicious cucumber appetizer recipe featuring our favourite Callipo tuna combined with Kewpie mayo and Proper Heathen chili oil crisp.
And last but not least, a refreshing cucumber salsa served with crisp Casa Bonita tortilla chips.
Stay cool and enjoy the summer.

A nice, refreshing change from typical salsa. This has a nice light crunch, but still packs just a little bit of heat.
