SAVOUR SUMMER

At this time of year, I’m particularly grateful to be living in Southwestern Ontario. A short drive in just about any direction from London illustrates the bounty that surrounds us.
This is showcased around the area with many great farmers' markets. Every Saturday I can’t wait to gather my produce baskets and head over to the outdoor venue at Covent Garden Market, right across the street from us. It’s there that I visit many of the vendors, have a friendly chat and fill my baskets with some of the freshest and tastiest produce. And it’s not just the fruits and vegetables — there’s cheese, bison products, local wines, fabulous bread, flowers and so much more.
As I check my overflowing baskets, I start thinking about my menu for Sunday dinner, when we gather as many of our family around the table out on our deck.
What will I do with the freshly dug baby potatoes? Will I make my friend Susan’s fabulous potato salad? Or will I roast them in the oven with olive oil and sea salt? And all those salad greens, tomatoes and onions will go into some form of fresh salad and drizzled with a delicious vinaigrette. The list goes on... and on.
I’ve shared a few recipes below to help you take advantage of this incredible bounty. A basic vinaigrette is a “must” to have on hand this time of year. Despite a current shortage of mustard seeds and mustard, we were able to secure a good supply of French and local mustards.
Mustard is a key ingredient in Susan’s potato salad recipe, and I highly recommend you give it a try. Local smoked trout is featured in our other salad recipe that would make a great lunch. (We have changed suppliers and have an excellent smoked trout in stock and available now in-store. We will add it to the e-store soon!)
At Jill’s Table, we are always working on recipes: for my column in The London Free Press, dishes for newsletters, and upcoming cooking classes.
Speaking of cooking classes, we are thrilled to launch our fall season today. Tickets are available now on JillsClasses.ca. We are excited to have wine and food pairings, hands on pizza and pasta making and hands on knife skills as well. Dave Ripley of Proper Heathen is going to spice up our season with his local hot creations. We continue to be grateful for the contributions of the many talented chefs and we look forward to seeing you in the kitchen.
We hope you are finding ways to savour all that summer has to offer.

JILL'S BASIC VINAIGRETTE
|
A basic vinaigrette can make the most ordinary of greens spectacular.
A proper vinaigrette is an emulsion, which means the oil is contained as very small droplets within the vinegar. First the salt is dissolved in the vinegar, the mustard and honey are whisked and, finally, the oil is slowly whisked in. The result is a smooth opaque mixture that will cling beautifully to salad greens.
