Summer is here and I'm looking forward to spending time outside with family and friends. One thing I’ve learned over the past two years is whatever get togethers we have been able to manage, it's best to make them simple and relaxing.
We're lucky that there are so many remarkable products to make our lives easier… but no less delicious. This newsletter is all about highlighting local products and sharing a few simple recipes.
Our first recipe is one that our team member Ruth-Ann whipped up one Saturday afternoon as she wanted to get a head start on dinner. It’s a simple but delicious sheet pan pasta sauce featuring grape tomatoes, onion, garlic, and the mild Italian-with-garlic-and-fennel sausage from Chris’ Country Cuts (in the Covent Garden Market). The aroma as it baked in the oven was amazing. Serve this over your favourite Rummo pasta.
At Jill's Table, we always use as much of any vegetable as we can. Have you ever made carrot top pesto? More often than not the leftover tops are simply tossed into the composter. But they can make a delicious pesto when combined with almonds, Parmesan cheese, garlic and olive oil.
If you're a fan of buying local fennel at farmers' markets, try the same recipe using the tops of the fennel. Use the pesto in a wrap or on your toasted tomato sandwich, or with pasta or boiled new potatoes for a different take on summer potato salad.
And speaking of potatoes, we’re providing the simplest-ever roasted potato recipe with two dynamite flavours. One variation uses Fire in the Kitchen Piri Piri blend and the other uses Fleur de Sel with Herbes de Provence.
If you don't want to use your oven on a hot summer day, try roasting the potatoes in a cast iron pan on your barbecue to enjoy the smoky flavour.
This is a fabulous time to visit some farmers' markets, then kick back, relax, and enjoy a few simple meals using the bounty that surrounds us.
